Benedetto Cavalieri's Pasta di Semola Integrale di Grano Duro Linguine is the wholemeal pasta of our choice. Whole grain pasta often tends to have a somewhat unusual crumbly consistency and tends to overcook. For us, Cavalieri's pasta di semola integrale is one of the very few whole-grain pastas that really taste very good and, equally important, comes closest to the normal "bite" (unlike so many other brands that are crumbly), with almost the consistency of "normal" pasta. Made from Italian durum wheat, from the whole grain. These linguine go very well with vegetables and vegetable sauces.

Since 1918 when durum wheat farmer Andrea Cavalieri and his son Benedetto decided to produce pasta, Pastificio Benedetto Cavalieri has been producing pasta by hand. Now it's already the fifth generation that is producing top-quality pasta in Puglia - with Italian durum wheat, bronze matrices for the rough surface and plenty of time for slow drying. Cavalieri developed the "metodo delicato", a special process that consists of four steps. Long kneading of the dough at cool temperatures ensures the typical consistency of the pasta. In the next step, the dough is pressed through bronze matrices very slowly with minimal pressure. In the third step, the pasta is dried at low temperature for at least 24, depending on the size and weight of the pasta, up to 40 hours - which ensures the typical bite. In the last step, the pasta rests in climate rooms for another 24 hours. Good things take time which goes especially for this top-notch pasta!
